Method
 

Cooking Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Season the cod fillets generously with salt and pepper.
  3. In a skillet, heat olive oil, sauté onion for 3-4 minutes until translucent.
  4. Add minced garlic and grated ginger, sauté for an additional 1-2 minutes.
  5. Add coconut milk, lemon juice, and lemon zest; bring to a gentle simmer for 3-5 minutes.
  6. Transfer seasoned cod into a baking dish and pour sauce over the cod.
  7. Bake for 20-25 minutes until the cod flakes easily with a fork.
  8. Let it rest for a few minutes before serving.
