Ingredients

For the Filling
  • 600 g Apples Use tart varieties like Granny Smith for a delightful contrast to the sweet Biscoff.
  • 100 g Biscoff Spread This provides creamy richness; feel free to substitute with another cookie butter if needed.
  • 2 tsp Lemon Juice Prevents the apples from browning and adds a zesty brightness.
  • 60 g Light Brown Sugar Enhances sweetness and caramel notes; golden caster sugar works as a good alternative.
  • 0.5 tsp Cinnamon Infuses warmth; can be swapped with pumpkin spice for a seasonal twist.
  • 0.5 tsp Mixed Spice A UK classic that complements the flavors; use pumpkin spice if unavailable.
  • 1 tsp Cornflour (Cornstarch) Helps thicken the filling for that perfect gooey texture.
For the Crumble Topping
  • 175 g Plain Flour The base for your crumble topping; replace with gluten-free flour blend for a gluten-free version.
  • 100 g Light Brown Sugar Adds delicious caramel flavor; regular caster sugar can be a substitute in a pinch.
  • 115 g Butter Provides richness; opt for dairy-free butter for a vegan-friendly option.
  • 45 g Biscoff Biscuits, crushed Adds extra texture and flavor to the crumble mix.

  3. In another bowl, toss 600g of chopped apples with 2 tsp of lemon juice, 60g of light brown sugar, 1 tsp of cornflour, 0.5 tsp of cinnamon, and 0.5 tsp of mixed spice.
  4. Spread the apple mixture into your prepared baking dish, then dollop spoonfuls of 100g of Biscoff spread across the top.
  5. Sprinkle the crumble mixture evenly over the apple filling, ensuring it covers the apples completely.
  6. Bake for about 40 minutes until the top is golden brown and the apple mixture bubbles slightly at the edges.
