Preparation Steps
- Place the eggs in a medium saucepan, cover with water, and bring to a boil. Remove from heat and let sit for 12 minutes. Cool under cold running water.
- Peel and slice the eggs in half, scoop out yolks, and mash with mayonnaise, mustard, and hot sauce. Add remaining spices and chill.
- Pat shrimp dry, toss in spice mix, and sear in olive oil for about 2 minutes on each side until cooked.
- Fill egg whites with yolk mixture and top with seared shrimp. Garnish with jalapeño and chives.
- Serve on a platter with lemon wedges on the side.
