Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin by lining it with paper liners or greasing each cup.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, Italian seasoning, garlic powder, baking powder, baking soda, and salt. Add finely shredded carrots if using.
  3. In another bowl, whisk together the wet ingredients: milk, eggs, and melted butter. Stir in the mozzarella cheese.
  4. Pour the wet mixture into the dry ingredients, folding gently until just combined.
  5. Fill each muffin cup about ¾ full, top with pizza sauce and remaining cheese, and any desired toppings.
