Step-by-Step Instructions
  1. Cream together the unsalted butter, coconut sugar, and honey with an electric mixer until creamy. Add egg and vanilla extract, mixing well.
  2. In a separate bowl, whisk together all-purpose flour, whole wheat flour, and baking powder. For chocolate, add cocoa powder.
  3. Gradually add dry ingredients to the wet mixture, stirring with a spatula until combined. Divide dough into two disks, wrap in plastic, and chill.
  4. Preheat oven to 350°F (180°C). Roll out one disk of dough to ¼ inch thick and cut out animal shapes.
  5. Bake crackers for approximately 12 minutes until edges are lightly browned.
  6. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
