  • 2 cups Milk Whole or almond milk.
  • 1 cup Parmesan Cheese Or Pecorino Romano.
  • 1 cup Cheddar Cheese Sharp or mild, can use Gouda.
  • 1 teaspoon Dried Summer Savoury Or thyme/oregano.
  • to taste Salt & Pepper Essential for flavor.
  • 1 cup Plain Potato Chips Or Panko breadcrumbs.
For Optional Serving
  • 2 tablespoons Fresh Parsley Chopped finely.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C).
  2. Cut cod into 1-inch pieces and arrange in a greased baking dish.
  3. Melt butter in a saucepan, sauté onion and garlic until translucent.
  4. Stir in corn starch, then add Dijon mustard and white wine.
  5. Gradually add milk, stirring until thickened, then add cheeses and season.
  6. Pour sauce over cod, gently mixing to coat.
  7. Top with remaining cheeses and crushed potato chips.
  8. Bake uncovered for 35-50 minutes until bubbly and cod is cooked through.
  9. Let rest before serving and garnish with parsley.
