  • 3/4 cup Blue Cheese Gorgonzola or any favorite blue cheese can suffice.
  • 1 cup Mozzarella Cheese Cheddar can be used for a different flavor profile.
For the Pasta
  • 8 ounces Macaroni Pasta Classic elbow macaroni is recommended.

Method
 

Cooking Instructions
  1. Start by melting 2 tablespoons of butter in a frying pan over medium-high heat. Once melted, add 2 cloves of minced garlic, 1 tablespoon of onion flakes, 1 teaspoon of dried chives, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Sauté for about 1 minute, until fragrant.
  2. Next, stir in 1 tablespoon of white wine vinegar, then pour in 1 cup of heavy cream and stir until smooth and slightly thickened, about 2-3 minutes.
  3. Reduce heat to low, add 3/4 cup of crumbled blue cheese and 1 cup of shredded mozzarella, stirring until fully melted and the sauce is silky, about 2-4 minutes.
  4. Meanwhile, boil a pot of salted water and cook 8 ounces of macaroni pasta according to package instructions until al dente, usually around 7-9 minutes. Drain and set aside.
  5. Gently add the drained macaroni to the cheese sauce, stirring thoroughly to coat. Heat through on low for about 2 minutes.
  6. Plate into bowls and optionally garnish with freshly grated Parmesan, black pepper, and fresh basil leaves. Serve hot.
