Step-by-Step Instructions for Matcha Horchata
  1. Rinse the rice under cold water until it runs clear. Combine with a cinnamon stick and 2 cups of water in a bowl and soak for at least 6 hours or overnight.
  2. Transfer the soaked rice and its water to a blender, add 2 cups of milk and 1/4 cup of sweetened condensed milk, then blend until smooth.
  3. Strain the blended mixture through a fine mesh strainer into a pitcher, pushing through with a spatula to discard solids.
  4. Whisk 1 teaspoon of matcha powder with 1/2 cup of hot water until smooth and frothy.
  5. In glasses filled with ice, pour the horchata base to fill two-thirds full, then layer the matcha on top.
  6. Sprinkle ground cinnamon on top and serve immediately.
