For the Shortbread Base
  • 125 g Unsalted Butter Melted
  • 100 g Desiccated Coconut
  • 75 g Caster Sugar
  • 150 g Plain Flour
For the Passionfruit Filling
  • 395 g Sweetened Condensed Milk
  • 60 ml Fresh Lemon Juice
  • 240 ml Strained Passionfruit Pulp Canned can be used if necessary
For the Topping
  • 1 st Powdered Gelatine
  • 60 ml Cold Water
  • Optional Passionfruit Seeds For texture

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 180°C (350°F) and line the baking tin with baking paper.
  2. In a bowl, combine melted butter, coconut, sugar, and flour. Press into the tin and bake for 20 minutes until golden.
  3. Whisk together the condensed milk, lemon juice, and passionfruit pulp in a bowl until smooth.
  4. Simmer remaining passionfruit pulp in a saucepan, sprinkle gelatine over it, wait 5 minutes, then heat until dissolved.
  5. Stir cold water and sugar into the gelatine mix and pour it over the passionfruit filling in the tin. Refrigerate for 2 hours to set.
