- Preheat the oven to 180°C (350°F) and line the baking tin with baking paper.
- In a bowl, combine melted butter, coconut, sugar, and flour. Press into the tin and bake for 20 minutes until golden.
- Whisk together the condensed milk, lemon juice, and passionfruit pulp in a bowl until smooth.
- Simmer remaining passionfruit pulp in a saucepan, sprinkle gelatine over it, wait 5 minutes, then heat until dissolved.
- Stir cold water and sugar into the gelatine mix and pour it over the passionfruit filling in the tin. Refrigerate for 2 hours to set.
