Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel the medium potatoes and cut them into small, even cubes, about 1-inch in size.
  3. In a large mixing bowl, combine the olive oil, salt, black pepper, paprika, garlic powder, onion powder, chili powder, cumin, oregano, and dried parsley.
  4. Add the cubed potatoes to the bowl filled with the seasoning mixture and toss until evenly coated.
  5. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper or greased.
  6. Place the baking sheet in the preheated oven and roast the potatoes for 30-35 minutes, tossing halfway through.
