  • 1 cup Buttermilk Can be replaced with yogurt or milk with lemon juice.
  • 1 teaspoon Salt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Black pepper
  • 1 cup Cornstarch Avoid substituting with flour.
For the Sweet Chili Mayo Sauce
  • 1 cup High-quality mayonnaise Kewpie is recommended.
  • 1/4 cup Thai sweet chili sauce Can substitute with honey and red pepper flakes.
  • 1 tablespoon Sriracha hot sauce Adjust to taste.

Method
 

Step‑by‑Step Instructions
  1. In a medium bowl, combine large shrimp, buttermilk, salt, garlic powder, onion powder, and black pepper. Marinate for about 10 minutes.
  2. Spread cornstarch in a shallow dish. Dredge the marinated shrimp in cornstarch until well-coated.
  3. Heat oil in a deep pot to 350°F (175°C). Check with a thermometer.
  4. Fry the coated shrimp in batches for about 2 minutes each or until golden brown.
  5. Mix mayonnaise, Thai sweet chili sauce, and Sriracha in a bowl for the sauce.
  6. Toss the fried shrimp in the sweet chili mayo sauce until evenly coated.
  7. Serve immediately, optionally garnish with green onions or sesame seeds.
