- In a medium saucepan, combine fresh blueberries, white sugar, lemon juice, and lemon thyme. Cook over medium heat, stirring gently, until it boils. Reduce to low and simmer for about 20 minutes.
- After thickening, remove from heat and let cool for about 10 minutes.
- Spread blueberry compote on one side of each slice of bread. Add white cheddar and mozzarella on top of the compote. Top with another slice of bread.
- Heat a skillet over medium heat, melt butter and grill the sandwiches for 2-3 minutes on each side until golden brown.
- Remove from skillet, garnish with flaky sea salt and thyme, then slice and serve warm.
