- Prepare the 'Honey' Mustard Sauce by whisking together oil, sweetener, mustard, salt, and pepper until smooth.
- Press the tofu by wrapping it in a towel and placing a heavy object on top for 10 minutes. Slice into 1-inch strips.
- Make the batter by mixing flour, cornstarch, baking powder, salt, and optional paprika. Gradually stir in water until thick.
- Coat each tofu strip in the batter and then in panko breadcrumbs, pressing gently to adhere. Set aside on a parchment-lined tray.
- Preheat the oven to 350°F (175°C). Bake the tofu strips for 30-35 minutes, flipping halfway through until golden.
- Once baked, brush each tender with the honey mustard sauce and return to the oven for an additional 5-8 minutes.
