  • 1 medium Cucumber slice or julienne for easier wrapping
  • 0.25 cup Red Bell Pepper finely chopped, optional
  • 0.25 cup Fresh Dill or Parsley can use fresh basil or cilantro as substitutes
  • Salt and Pepper to taste
  • 1 tablespoon Lemon Juice can use white vinegar or apple cider vinegar
  • 0.5 teaspoon Garlic Powder or 1 small clove minced, optional

Method
 

Preparation
  1. In a medium bowl, combine cottage cheese, chopped dill or parsley, lemon juice, salt, and pepper. Stir vigorously until blended and creamy.
  2. Lay out wraps on a clean surface. Spread a generous scoop of cottage cheese mixture evenly across each wrap, leaving about 1 inch from edges.
  3. Slice cucumber and any optional vegetables, placing them along the center of each wrap.
  4. Roll each wrap tightly from the edge closest to you, folding in the sides as you go to encase the filling securely.
  5. Using a sharp knife, slice each rolled wrap in half diagonally for presentation. Serve immediately or wrap tightly for storage.
