For the Crumble
  • 1 cup Butter softened
  • 1 cup Sugar granulated
  • 1 cup Brown Sugar packed
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 cups Flour
  • 2 cups Quick Oats
For the Cream Cheese Filling
  • 8 oz Cream Cheese at room temperature
  • 1 can Sweetened Condensed Milk
  • 1 teaspoon Vanilla pure extract
  • 1 large Egg Yolk
  • 2 cups Blueberries (or Raspberries) fresh or thawed if frozen

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by lining it with parchment paper or lightly greasing it.
  2. In a large mixing bowl, combine softened butter, granulated sugar, brown sugar, baking soda, salt, flour, and quick oats until it resembles coarse crumbs.
  3. Press half of the crumble mixture into the bottom of the prepared baking pan and bake for about 13 minutes until golden brown.
  4. In a separate bowl, beat the cream cheese until smooth, then whisk in sweetened condensed milk, vanilla extract, and egg yolk until creamy.
  5. Pour the cream cheese mixture over the baked crumble base, spreading it evenly.
  6. Gently scatter the fresh blueberries over the cream cheese layer, then sprinkle the remaining crumble on top and press lightly.
  7. Return to the oven and bake for an additional 20-25 minutes until the edges are golden and the center is set.
  8. Allow to cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
