Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by lining it with parchment paper or lightly greasing it.
- In a large mixing bowl, combine softened butter, granulated sugar, brown sugar, baking soda, salt, flour, and quick oats until it resembles coarse crumbs.
- Press half of the crumble mixture into the bottom of the prepared baking pan and bake for about 13 minutes until golden brown.
- In a separate bowl, beat the cream cheese until smooth, then whisk in sweetened condensed milk, vanilla extract, and egg yolk until creamy.
- Pour the cream cheese mixture over the baked crumble base, spreading it evenly.
- Gently scatter the fresh blueberries over the cream cheese layer, then sprinkle the remaining crumble on top and press lightly.
- Return to the oven and bake for an additional 20-25 minutes until the edges are golden and the center is set.
- Allow to cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
