Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and spread the halved cherries evenly across it. Sprinkle with sugar and roast for about 10 minutes.
  2. Lower the oven temperature to 325°F (160°C). Grease an 8x8 inch baking pan and line it with parchment paper.
  3. In a medium bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. In a large bowl, beat the eggs, granulated sugar, and egg yolk on high speed for about 5 minutes until pale and fluffy. Stir in melted butter, oil, and vanilla extract.
  5. Gently fold the dry ingredients into the wet ingredients with a spatula, then fold in half of the roasted cherries and chocolate chips.
  6. Pour the batter into the prepared pan, spread evenly, and bake for 40-50 minutes, until edges are set but the center remains slightly underdone.
  7. Allow the brownies to cool in the pan for about 15 minutes, then transfer to the freezer for easier cutting. Top with remaining roasted cherries before serving.
