- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and spread the halved cherries evenly across it. Sprinkle with sugar and roast for about 10 minutes.
- Lower the oven temperature to 325°F (160°C). Grease an 8x8 inch baking pan and line it with parchment paper.
- In a medium bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
- In a large bowl, beat the eggs, granulated sugar, and egg yolk on high speed for about 5 minutes until pale and fluffy. Stir in melted butter, oil, and vanilla extract.
- Gently fold the dry ingredients into the wet ingredients with a spatula, then fold in half of the roasted cherries and chocolate chips.
- Pour the batter into the prepared pan, spread evenly, and bake for 40-50 minutes, until edges are set but the center remains slightly underdone.
- Allow the brownies to cool in the pan for about 15 minutes, then transfer to the freezer for easier cutting. Top with remaining roasted cherries before serving.
