- Preheat your oven to 325°F (160°C) and prepare a 9x13-inch baking dish by greasing or lining it with parchment paper.
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix well and press firmly into the bottom of the prepared dish.
- In a large mixing bowl, beat softened cream cheese with granulated sugar until smooth, then add eggs one at a time and vanilla extract.
- Pour the cheesecake filling over the crust, spreading evenly with a spatula.
- Peel, core, and slice the apples, then toss them with cinnamon and brown sugar until well-coated.
- Spread the apple mixture over the cheesecake layer, gently pressing down the apple slices. Bake for 40-45 minutes.
- Remove from the oven and allow to cool at room temperature for about an hour, then chill in the refrigerator for at least 2 hours.
- Slice into bars and serve chilled or at room temperature, optionally topped with whipped cream or caramel sauce.
