Prepare Marinade
- Combine shallots, lemongrass, fish sauce, oyster sauce, lime juice, pure maple syrup, brown sugar, ginger, garlic, toasted sesame oil, chili paste, ground coriander, and Chinese five spice in a food processor; blend until smooth.
Marinate Pork
- Slice the pork tenderloin into long, thin pieces, pound to tenderize, coat with marinade, cover, and refrigerate for 6-8 hours.
Pickle Vegetables
- Combine rice vinegar, sugar, and water in a microwave-safe bowl; microwave until boiling, whisk to dissolve sugar, and pour over matchstick carrots and daikon in a sealed jar. Let soak for at least 30 minutes.
Toast Baguettes
- Preheat the oven to 400°F (200°C). Slice baguettes, brush cut sides with oil or butter, place on a baking sheet, and toast for 5–7 minutes until crispy.
Cook Pork
- Grill marinated pork slices for about 1-2 minutes per side until cooked through and charred.
Assemble Sandwiches
- Spread mayonnaise (and optional pâté) on toasted baguette, layer with grilled pork, pickled vegetables, cucumber slices, jalapeños, and cilantro. Close sandwich.
