Ingredients
  

For the Pork Marinade
  • 1 lb Pork Tenderloin avoid tougher cuts
  • 2 tbsp Shallots or yellow onions if low
  • 1 stalk Lemongrass use only the tender white part
  • 2 tbsp Fish Sauce for authentic flavor
  • 2 tbsp Oyster Sauce opt for a quality brand
  • 2 tbsp Lime Juice fresh is recommended
  • 1 tbsp Pure Maple Syrup or substitute with brown sugar
  • 1 tbsp Brown Sugar
  • 1 tbsp Ginger use fresh or ground
  • 3 cloves Garlic or garlic powder if out
  • 1 tbsp Toasted Sesame Oil not regular sesame oil
  • 1 tbsp Chili Paste try Sambal Oelek
  • 1 tsp Ground Coriander
  • 1 tsp Chinese Five Spice
  • 2 tbsp Vegetable/Canola Oil for marinating
For the Pickled Vegetables
  • 1 cup Matchstick Carrots or regular carrots
  • 1 cup Daikon or radishes if unavailable
  • 1 cup Rice Vinegar unseasoned preferred
  • 2 tbsp Sugar
For Assembly
  • 1 loaf Baguette crispy for crunch
  • 1 medium Cucumber English cucumbers preferred
  • 1 medium Jalapeños optional
  • 1 bunch Fresh Cilantro for flavor
  • 2 tbsp Mayonnaise mix with chili paste if desired
  • 2 tbsp Pâté optional for richness

Method
 

Prepare Marinade
  1. Combine shallots, lemongrass, fish sauce, oyster sauce, lime juice, pure maple syrup, brown sugar, ginger, garlic, toasted sesame oil, chili paste, ground coriander, and Chinese five spice in a food processor; blend until smooth.
Marinate Pork
  1. Slice the pork tenderloin into long, thin pieces, pound to tenderize, coat with marinade, cover, and refrigerate for 6-8 hours.
Pickle Vegetables
  1. Combine rice vinegar, sugar, and water in a microwave-safe bowl; microwave until boiling, whisk to dissolve sugar, and pour over matchstick carrots and daikon in a sealed jar. Let soak for at least 30 minutes.
Toast Baguettes
  1. Preheat the oven to 400°F (200°C). Slice baguettes, brush cut sides with oil or butter, place on a baking sheet, and toast for 5–7 minutes until crispy.
Cook Pork
  1. Grill marinated pork slices for about 1-2 minutes per side until cooked through and charred.
Assemble Sandwiches
  1. Spread mayonnaise (and optional pâté) on toasted baguette, layer with grilled pork, pickled vegetables, cucumber slices, jalapeños, and cilantro. Close sandwich.
