- In a large skillet over medium heat, add diced bacon and cook until crispy, about 5-7 minutes. Remove the bacon and drain on a paper towel, leaving grease in the skillet.
- In a bowl, beat the eggs until fully combined. Pour the eggs into the skillet with the bacon grease. Cook for about 2-3 minutes until fluffy and just set. Remove from skillet.
- Add the cooked rice to the skillet, breaking clumps. Stir to coat in the bacon grease and cook for 3-4 minutes until heated through and slightly crispy.
- Once the rice is hot, add crispy bacon and scrambled eggs back. Chop green onions and sprinkle in. Stir everything gently for 1-2 minutes to combine.
