  • 1 medium Red Bell Pepper can swap for green
  • 1 cup Parboiled Long-Grain Brown Rice or long-grain white rice
  • 2 tablespoons Fajita Seasoning homemade or store-bought
  • 1/2 teaspoon Cayenne Pepper optional
  • 1 cup Corn Kernels frozen, fresh or canned
  • 1 can Black Beans low sodium, drained and rinsed
  • 2 cups Shredded Chicken use rotisserie or boiled
  • 2 cups Reduced Sodium Chicken Broth or vegetable broth for vegetarian
  • 1 can Mild Green Chiles canned
  • 2 tablespoons Olive Oil optional
  • 2 tablespoons Tomato Paste can swap with crushed tomatoes
  • 2 cups Shredded Monterey Jack Cheese or cheddar or vegan
For Serving
  • 1/4 cup Fresh Cilantro finely chopped
  • 1/4 cup Green Onions sliced
  • 1 cup Salsa your favorite brand or homemade
  • 1 medium Avocado sliced or diced

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grab a 9x13 inch baking dish.
  2. Combine finely diced onion, red bell pepper, uncooked parboiled long-grain brown rice, fajita seasoning, and cayenne pepper in the baking dish.
  3. In a separate bowl, whisk together reduced sodium chicken broth, mild green chiles, tomato paste, and olive oil, then pour over the rice and veggie blend.
  4. Fold in shredded chicken, black beans, and frozen corn, mixing gently.
  5. Cover the baking dish with aluminum foil and bake for 65-70 minutes.
  6. Remove the foil, sprinkle shredded Monterey Jack cheese over the top, and bake uncovered for an additional 5-10 minutes.
