- In a medium saucepan, heat 2 tablespoons of vegetable or coconut oil over medium heat. Once the oil shimmers, add 3 minced garlic cloves and 1 tablespoon of freshly grated ginger. Sauté for about 5 minutes until the mixture becomes fragrant and lightly golden.
- Add 1 cup of rinsed white rice to the saucepan with the sautéed aromatics. Stir the rice continuously for about 2 minutes.
- Mix in 1 cup of chopped fresh pineapple, 1 tablespoon of sriracha, 2 tablespoons of coconut aminos, 1 teaspoon of sugar, and a pinch of salt. Stir the mixture for about 1 minute.
- Pour in 1 ½ cups of water and bring the mixture to a boil. Reduce the heat to medium-low, cover the saucepan with a lid, and let it simmer for 15 minutes.
- After 15 minutes, turn off the heat and leave the saucepan covered for another 5 minutes. Fluff the rice gently with a fork before serving warm.
