For the Strawberry Base
  • 1 cup ripe strawberries washed and hulled
  • 1/4 cup pineapple juice 100% juice
For the Coconut-Pineapple Mixture
  • 1 cup fresh pineapple chunks provides natural sweetness
  • 1/2 cup ice cubes essential for chill
  • 1/2 cup canned coconut milk adds creaminess
  • 1/2 cup pineapple juice all natural
Optional Sweetener
  • 1 tablespoon brown sugar to adjust sweetness

Method
 

Preparing the Drink
  1. Wash and hull the strawberries, then cut them in half. Blend with pineapple juice until smooth.
  2. In a cleaned blender, combine fresh pineapple, ice cubes, coconut milk, and pineapple juice. Blend until creamy.
  3. Pour strawberry base into a tall glass until 25% full, then layer the coconut mixture on top.
  4. Garnish with a wedge of pineapple and a whole strawberry on the rim.
