Cooking Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Spread uncooked white rice evenly across the bottom of the baking dish.
  3. Pour chicken broth over the rice, ensuring each grain is submerged.
  4. Distribute the cooked chicken evenly over the rice.
  5. Scatter diced cucumber, chopped red onion, halved grape tomatoes, and sliced Kalamata olives over the chicken.
  6. In a bowl, mix tzatziki sauce with garlic powder, oregano, salt, and pepper. Spread over the layers.
  7. Sprinkle crumbled feta cheese over the top.
  8. Cover the dish with aluminum foil and bake for 45 minutes.
  9. After 45 minutes, remove the foil and bake for an additional 10 minutes.
  10. Let the casserole cool briefly before garnishing with fresh parsley.
