- Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your baking dish.
- Generously grease the bottom and sides of your baking dish with non-stick cooking spray.
- Press half of the refrigerated sugar cookie dough evenly into the bottom of the greased baking dish.
- Unwrap about eight Peeps and place them evenly over the cookie dough layer, gently pressing them down.
- Crumble the remaining half of the sugar cookie dough over the Peeps, distributing it evenly.
- Bake the dish in the preheated oven for approximately 8 minutes until edges are lightly golden.
- Remove the dish and gently swirl the softened Peeps over the surface of the cookie bars.
- Return the dish to the oven and bake for an additional 12 minutes until edges are golden brown.
- Allow the bars to cool completely at room temperature.
- Refrigerate the cooled bars for about one hour before slicing.
- Slice the bars into squares with a butter knife sprayed with non-stick cooking spray and serve.
