Method
 

Preparation
  1. If using fresh rice, cook jasmine or basmati rice according to package instructions and let it cool on a baking sheet for 15-20 minutes.
  2. Whisk eggs with a splash of soy sauce and scramble in a hot skillet with oil for 2-3 minutes, then set aside.
  3. In the same skillet, add more oil and sauté minced garlic and ginger for about 30 seconds.
  4. Cook mixed vegetables in the skillet for 3-5 minutes until tender-crisp.
  5. Add cooled rice, breaking up clumps, and stir-fry for 3-4 minutes.
  6. Return scrambled eggs to the skillet, add soy sauce, and toss everything together for an additional 2-3 minutes.
  7. Serve hot, garnished with sliced green onions.
