Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and prepare your baking dish.
  2. Lightly grease a suitable baking dish with cooking spray or olive oil.
  3. In a large mixing bowl, combine all the veggies and cottage cheese. Mix thoroughly.
  4. In a separate bowl, whisk eggs, olive oil, garlic powder, onion powder, black pepper, salt, and oregano.
  5. Pour the egg mixture over the vegetable mixture and gently fold everything together.
  6. Transfer the combined mixture into the greased baking dish, spreading it evenly.
  7. Sprinkle shredded mozzarella cheese generously over the top.
  8. Bake for 30-35 minutes until golden brown. Check for doneness with a knife.
