Method
 

Step-by-Step Instructions
  1. Pat the corned beef dry and sear in oil over medium-high heat for 2-4 minutes on each side.
  2. Deglaze skillet with broth and mustard, pour over the beef in the slow cooker.
  3. Add garlic, onion, peppercorns, thyme, and bay leaves to the slow cooker.
  4. Cover and slow cook on low for 6-7 hours.
  5. Add carrot chunks 1-2 hours before the beef is done.
  6. Sauté cabbage in butter for about 10 minutes until golden.
  7. Add sautéed cabbage to the slow cooker for 30-60 minutes.
  8. Let the corned beef rest for 10 minutes before slicing.
  9. Serve sliced beef with carrots and cabbage, garnished with parsley and chives.
