Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C).
  2. In a medium mixing bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper to create the marinade.
  3. Marinate the ribs in a shallow dish, cover with plastic wrap, and refrigerate for at least 30 minutes or overnight.
  4. Sear the marinated beef short ribs in an oven-safe pot over medium-high heat for 2-3 minutes on each side.
  5. Pour reserved marinade over the ribs, cover, and roast in the oven for 3 hours.
  6. Mix cornstarch with water to form a slurry, then stir into the pot with remaining juices and simmer until thickened.
  7. Brush the glaze over the ribs and broil on high for 5-10 minutes until caramelized.
  8. Remove the ribs from the oven and let them rest for about 15 minutes before slicing.
