Fudge Preparation
- Toast the pecans in a skillet with 2 tablespoons of butter over medium heat for about 5 minutes.
- Melt 2 sticks of butter in a large saucepan over medium-high heat.
- Add 1 cup of granulated sugar and 1 cup of packed brown sugar to the melted butter, stirring until dissolved.
- Pour in 1-1/8 cups of heavy whipping cream, along with 1/4 teaspoon of salt and 1 tablespoon of vanilla extract.
- Bring the mixture to a rolling boil, stirring occasionally, and set a timer for 4 minutes.
- Gradually stir in 4 cups of sifted powdered sugar until smooth and well blended.
- Fold in the toasted pecans until evenly distributed.
- Pour the fudge mixture into a greased or parchment-lined baking dish and let it sit at room temperature for at least 3 hours to set.
- Once set, cut the fudge into squares for serving.
