Fudge Base
  • 2 sticks Butter Substitute with margarine for a non-dairy option.
  • 2 Tbsp Butter For toasting pecans.
  • 1 cup Granulated Sugar No direct substitute.
  • 1 cup Brown Sugar Packed.
  • 1.125 cups Heavy Whipping Cream Can substitute with half-and-half.
  • 0.25 tsp Salt Optional, but recommended.
  • 1 Tbsp Vanilla Extract Use pure vanilla for best flavor.
  • 4 cups Powdered Sugar Sifted to eliminate lumps.
Pecans
  • 2 cups Toasted Pecans Can substitute walnuts or omit for nut-free.

Method
 

Fudge Preparation
  1. Toast the pecans in a skillet with 2 tablespoons of butter over medium heat for about 5 minutes.
  2. Melt 2 sticks of butter in a large saucepan over medium-high heat.
  3. Add 1 cup of granulated sugar and 1 cup of packed brown sugar to the melted butter, stirring until dissolved.
  4. Pour in 1-1/8 cups of heavy whipping cream, along with 1/4 teaspoon of salt and 1 tablespoon of vanilla extract.
  5. Bring the mixture to a rolling boil, stirring occasionally, and set a timer for 4 minutes.
  6. Gradually stir in 4 cups of sifted powdered sugar until smooth and well blended.
  7. Fold in the toasted pecans until evenly distributed.
  8. Pour the fudge mixture into a greased or parchment-lined baking dish and let it sit at room temperature for at least 3 hours to set.
  9. Once set, cut the fudge into squares for serving.
