- Preheat your oven to 350°F (175°C) and spray a baking sheet with olive oil.
- In a large bowl, combine ground beef and seasonings: salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, and grated onion.
- Cut mini peppers in half lengthwise and remove seeds. Fill each half with the beef mixture.
- Arrange stuffed peppers on the baking sheet and bake for 20 minutes until softened and beef is cooked.
- Sprinkle shredded mozzarella on top of each pepper and return to the oven for 3-4 minutes until cheese is melted.
- Let cool for a minute, garnish with parsley if desired, and serve.
