Ingredients
  

For the Pasta
  • 5 ounces dry pasta swap for gluten-free if needed
For the Shrimp
  • 1 pound thawed shrimp tails removed
  • 2 tablespoons olive oil can substitute with butter
  • to taste teaspoon salt
  • to taste teaspoon pepper
For the Flavor
  • 3 cloves fresh minced garlic or garlic powder
  • 1 teaspoon smoked paprika or regular paprika or cayenne
  • to taste teaspoon chili flakes
For the Greens
  • 5-6 cups fresh spinach can swap for kale or Swiss chard
  • to taste fresh basil or parsley dried herbs can be used
For the Zing
  • 2 tablespoons lemon juice fresh lemon is best
  • 1 tablespoon lemon zest
Optional Addition
  • to taste tablespoon grated Parmesan omit for dairy-free version

Equipment

Method
 

Step 1: Boil the Pasta
  1. Bring a large pot of water to a rolling boil. Add a pinch of salt and 5 ounces of dry pasta. Cook according to package instructions for 8-10 minutes until al dente. Drain and return to the pot.
Step 2: Prepare the Shrimp
  1. In a bowl, toss 1 pound of thawed shrimp with olive oil, smoked paprika, chili flakes, and salt and pepper. Let marinade for 5 minutes.
Step 3: Cook the Shrimp
  1. Heat a large skillet over medium-high heat and add olive oil. Add marinated shrimp in a single layer. Sauté for 1-2 minutes on each side until opaque and pink. Remove shrimp from pan.
Step 4: Sauté the Garlic
  1. In the same skillet, add more olive oil and sauté 3 cloves of minced garlic for 2-3 minutes until fragrant.
Step 5: Add the Spinach
  1. Add 5-6 cups of fresh spinach to the skillet and cook for 1-2 minutes until wilted.
Step 6: Combine the Ingredients
  1. Turn off heat, add drained pasta, cooked shrimp, lemon juice, and lemon zest. Toss everything together.
Step 7: Final Touches and Serve
  1. Fold in chopped basil or parsley. Adjust seasoning and serve hot, optionally topped with Parmesan.
