Ingredients
  

For the Steak Marinade
  • 1 pound Sirloin Steak Can swap with flank or skirt steak.
  • 2 tablespoons Olive Oil Avocado oil can be used instead.
  • 2 cloves Garlic Minced; can use garlic powder if fresh is not available.
  • 2 tablespoons Lemon Juice Fresh is best, bottled works in a pinch.
  • 1 teaspoon Dried Oregano Fresh can add more flavor.
  • 1 teaspoon Dried Thyme Fresh can add more flavor.
  • to taste Salt
  • to taste Black Pepper
For the Bowl Base
  • 2 cups Cooked Grains Use brown rice, quinoa, or cauliflower rice.
  • 1 can Roasted Chickpeas Optional, can use other beans.
For the Fresh Veggies
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber Chopped.
  • 1 small Red Onion Can use green onions for milder flavor.
  • 1/2 cup Kalamata Olives Optional.
For the Toppings
  • 1/2 cup Feta Cheese Can use dairy-free cheese.
  • to taste Fresh Herbs (Parsley or Dill)
For the Tzatziki Sauce
  • 1 cup Greek Yogurt Can substitute with coconut yogurt.
  • 1/2 cup Cucumber for Tzatziki Grated and excess moisture squeezed out.
  • 1 tablespoon Honey Omit for Whole30.

Method
 

Preparation
  1. In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Whisk until well blended. Coat the steak thoroughly and marinate for at least 30 minutes.
  2. Prepare the tzatziki by combining Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Mix well and chill for 20-30 minutes.
  3. In a small bowl, combine olive oil, lemon juice, honey, minced garlic, oregano, salt, and pepper. Whisk until smooth and set aside.
Cooking
  1. Heat a skillet or grill pan over medium-high heat. Cook the marinated steak for 4-5 minutes on each side until golden brown and medium-rare.
  2. Let the cooked steak rest for 5 minutes, then slice against the grain.
Assembly
  1. Layer cooked grains in a bowl, top with sliced steak, roasted chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. Drizzle with tzatziki and vinaigrette. Garnish with fresh herbs before serving.
