  • 0.5 cups Unsalted Butter Warm for proper emulsification
  • 1 tablespoon Chipotle in Adobo Adjust based on spice preference

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Slice sweet potatoes into even rounds, arrange on a baking sheet, drizzle with olive oil and season with salt and pepper. Roast for 20-25 minutes, flipping halfway through.
  3. In a blender, combine egg yolks, lemon juice, and a pinch of salt. Gradually blend in warm melted butter until thickened, then blend in chipotle in adobo.
  4. In a medium saucepan, bring water to a gentle simmer and add a splash of vinegar. Crack each egg into ramekins and gently poach them for 3-4 minutes.
  5. Layer roasted sweet potatoes on plates, top with chorizo, then poached eggs. Drizzle chipotle hollandaise over and finish with avocado, cilantro, and lime.
