Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) to achieve a crispy crust.
  2. In a food processor, combine cilantro, lime juice, jalapeño, salt, pine nuts, and cotija cheese. Pulse and drizzle in olive oil until creamy.
  3. Cook the chorizo in a skillet over medium heat for 5-7 minutes until browned. Transfer to a paper towel-lined plate.
  4. Roll out prepared pizza dough on a floured surface to fit a 9"x12" sheet pan, aiming for about ¼ inch thick.
  5. Spread the cilantro pesto on the dough, top with mozzarella cheese and cooked chorizo, finishing with crumbled cotija.
