- Preheat your oven to 350°F (175°C) and prepare your muffin tin with nonstick cooking spray.
- In a large mixing bowl, combine ground beef, onion, eggs, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and ½ cup of ketchup. Mix gently.
- Scoop the meat mixture into the muffin tin, filling each cup about three-quarters full and smoothing the tops.
- In a small bowl, mix remaining ¼ cup of ketchup with brown sugar and mustard. Spread this topping over each meatloaf.
- Bake for 30 minutes until puffed and lightly browned. Ensure the internal temperature reaches 160°F (70°C).
- Let the mini meatloaf cool in the tin for about 5 minutes before removing and serving warm.
