For the Meatloaf
  • 1 pound Ground beef Can substitute with lean ground turkey or chicken.
  • 1 medium White onion (finely minced) Yellow onion or shallots can be used.
  • 2 large Eggs For vegetarian option, use flax eggs.
  • 1 cup Breadcrumbs Crushed crackers or oatmeal are gluten-free alternatives.
  • 2 tablespoons Worcestershire sauce Soy sauce can be a substitute.
  • 1 teaspoon Pepper Adjust to taste.
  • 1 teaspoon Seasoning salt Regular salt may be used instead.
  • 1 teaspoon Garlic powder Fresh minced garlic can be substituted.
  • ½ cup Ketchup Low-sugar version can be used.
  • 2 tablespoons Brown sugar Honey or maple syrup are good alternatives.
  • 2 teaspoons Mustard Dijon or honey mustard can be used.
For the Topping
  • ¼ cup Ketchup Mix with brown sugar and mustard before spreading.

Method
 

Preparation Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with nonstick cooking spray.
  2. In a large mixing bowl, combine ground beef, onion, eggs, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and ½ cup of ketchup. Mix gently.
  3. Scoop the meat mixture into the muffin tin, filling each cup about three-quarters full and smoothing the tops.
  4. In a small bowl, mix remaining ¼ cup of ketchup with brown sugar and mustard. Spread this topping over each meatloaf.
  5. Bake for 30 minutes until puffed and lightly browned. Ensure the internal temperature reaches 160°F (70°C).
  6. Let the mini meatloaf cool in the tin for about 5 minutes before removing and serving warm.
