  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1/4 cup Fresh Parsley chopped, cilantro works as a substitute
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 tbsp Olive Oil for grilling
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt or coconut yogurt for dairy-free
  • 2 tbsp Lemon Juice freshly squeezed
  • 1 clove Optional Garlic minced

Step-by-Step Instructions
  1. In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, chopped fresh parsley, ground cumin, ground coriander, salt, and black pepper. Mix these ingredients thoroughly with your hands to ensure an even distribution.
  2. Wet your hands with a little water to prevent sticking. Scoop out portions of the mixture to roll into 10 to 12 oval shapes, about the size of an egg.
  3. Preheat your grill to medium-high heat, lightly oil the grill grates with olive oil.
  4. Carefully place the shaped kofta on the preheated grill. Cook them for about 5 to 7 minutes on each side until golden brown.
  5. While grilling, mix the plain yogurt, freshly squeezed lemon juice, and optional minced garlic in a small bowl. Whisk until smooth.
  6. Once the kofta are grilled and cooked through, remove them from the heat and serve with the creamy garlic yogurt sauce.
