Step-by-Step Instructions
  1. In a bowl, mix together olive oil, minced garlic, fresh lemon juice, dried oregano, dried thyme, salt, and black pepper. Coat the sirloin steak thoroughly in this marinade, and allow to marinate for about 30 minutes.
  2. In a mixing bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, chopped dill, salt, and black pepper for the tzatziki. Stir and chill.
  3. In a small bowl, whisk together olive oil, fresh lemon juice, honey, minced garlic, dried oregano, salt, and black pepper for the vinaigrette.
  4. Heat a skillet over medium-high heat, lightly oiled if needed. Sear the marinated steak for 4-5 minutes on each side until desired doneness.
  5. Prepare your bowls by layering a base of cooked grains. Arrange sliced steak atop, and add cherry tomatoes, cucumber, red onion, roasted chickpeas, Kalamata olives, and crumbled feta cheese.
  6. Drizzle the homemade tzatziki and vinaigrette over the bowl, and finish with fresh herbs.
