Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C).
  2. Smash 15 cloves of fresh garlic and collect fresh oregano leaves and lime juice.
  3. In a pot, heat 2 tablespoons of olive oil, add smashed garlic and cook for 3-4 minutes.
  4. Cut the baguette into bite-sized pieces, toss in olive oil, and bake for 10 minutes.
  5. Pour broth into the pot with garlic, increase heat, add salt and oregano, and simmer for 2-3 minutes.
  6. Beat 2 eggs and drizzle into the soup, stirring gently for 3-5 minutes.
  7. Remove from heat and stir in lime juice.
  8. Ladle the soup into bowls and top with croutons, serving lime wedges on the side.
