Ingredients
  

For the Kofta
  • 1 pound Ground Beef Substitute with ground lamb or turkey if desired.
  • 1 handful Fresh Herbs (Parsley, Mint) Fresh is best for vibrant flavors.
  • 1 medium Onion Grated for more moisture.
  • 2 cloves Garlic Minced; fresh preferred.
  • 1 cup Breadcrumbs Gluten-free breadcrumbs if necessary.
For the Golden Potatoes
  • 2-3 medium Potatoes Can swap with sweet potatoes.
For the Tahini Sauce
  • 1/3 cup Tahini Peanut butter is a substitute but alters taste.
  • 1 juice Lemon Fresh lemon juice preferred.
  • 2 tablespoons Olive Oil Melted butter can be a substitute.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine ground beef, chopped parsley and mint, grated onion, and minced garlic. Mix thoroughly for about 2 minutes until slightly sticky.
  2. Shape the kofta mixture into elongated meatballs or patties and place on a parchment-lined tray.
  3. Preheat the oven to 350°F (175°C). Slice potatoes into thin rounds and arrange them in a baking dish, drizzle with olive oil, and season with salt and pepper.
  4. Arrange the kofta on top of the seasoned potatoes in the baking dish and bake for 25–30 minutes until cooked through.
  5. Whisk together tahini, lemon juice, minced garlic, and enough water for a smooth sauce.
  6. Once cooked, drizzle the tahini sauce over the kofta and potatoes, return to the oven for another 15–20 minutes.
  7. Let it cool slightly before serving warm, garnished with extra herbs if desired.
