Preparation Steps
- In a large mixing bowl, combine ground beef, chopped parsley and mint, grated onion, and minced garlic. Mix thoroughly for about 2 minutes until slightly sticky.
- Shape the kofta mixture into elongated meatballs or patties and place on a parchment-lined tray.
- Preheat the oven to 350°F (175°C). Slice potatoes into thin rounds and arrange them in a baking dish, drizzle with olive oil, and season with salt and pepper.
- Arrange the kofta on top of the seasoned potatoes in the baking dish and bake for 25–30 minutes until cooked through.
- Whisk together tahini, lemon juice, minced garlic, and enough water for a smooth sauce.
- Once cooked, drizzle the tahini sauce over the kofta and potatoes, return to the oven for another 15–20 minutes.
- Let it cool slightly before serving warm, garnished with extra herbs if desired.
