Method
 

Step-by-Step Instructions
  1. Melt 2 tablespoons of butter in a large skillet over medium heat. Add 1 finely chopped shallot and sauté until translucent and fragrant (3-5 minutes).
  2. Introduce 8 ounces of sliced baby Bella mushrooms to the skillet. Stir for about 8-10 minutes until tender and browned.
  3. Sprinkle 2 tablespoons of flour over the mushrooms and stir for about 1 minute. Gradually whisk in 1 cup of chicken broth and bring to a simmer, cooking for 3-5 minutes to thicken.
  4. Slowly pour in 1 cup of half-and-half while stirring. Add 1 tablespoon of soy sauce along with salt and pepper. Simmer for another 4-6 minutes.
  5. Stir in ½ cup of grated Parmesan cheese and a handful of chopped fresh parsley. Toss with freshly cooked fettuccine, coating evenly.
