Step-by-Step Instructions
  1. Start by dicing the beef, bacon, and your choice of vegetables. This’ll take about 10 minutes.
  2. In a large pot over medium heat, add the diced bacon and cook until crispy, roughly 5–7 minutes. Remove the bacon and set it aside.
  3. In the same pot with the reserved bacon fat, add the diced beef and sear for about 4–6 minutes until browned.
  4. Add the chopped onions and bell peppers to the pot and sauté until softened, about 5 minutes.
  5. Pour in the cream and add the cooked bacon back into the pot. Simmer on low heat for about 3 minutes.
  6. Mix cornstarch with a splash of water until smooth. Add to the soup, stirring continuously until thickened, about 3–5 minutes.
  7. Reduce heat to low and stir in cheese until melted, about 2–3 minutes. Adjust seasonings to taste.
  8. Toast slices of bread until golden, top with cheese and serve alongside the soup.
