Ingredients
  

For the Pasta
  • 12 oz Penne Pasta or fusilli or rigatoni
For the Protein
  • 1 lb Boneless Skinless Chicken Breast or turkey; optional
  • 1 lb Shrimp peeled and deveined
  • 8 oz Andouille Sausage or chorizo or kielbasa
For the Veggies
  • 1 cup Bell Peppers mixed or single colors
  • 1 medium Red Onion or yellow onion
  • 4 cloves Garlic or 1/2 tsp of garlic powder per clove
For the Sauce
  • 1 cup Heavy Cream or half-and-half or non-dairy
  • 1 cup Parmesan Cheese or Pecorino Romano or nutritional yeast
  • 2 tbsp Cajun Seasoning
For Cooking
  • 3 tbsp Olive Oil or butter or neutral oil
  • to taste Salt
  • to taste Pepper
For Garnish
  • 2 tbsp Chopped Parsley or chives

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook for 10-12 minutes until al dente, then drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the chicken breasts with Cajun seasoning, add to the skillet, and cook for 4-5 minutes until golden brown. Remove from skillet.
  3. In the same skillet, add the shrimp and sauté for 2-3 minutes until pink and opaque. Remove from skillet with the chicken.
  4. Add another tablespoon of olive oil to the skillet. Sauté the sliced sausage for 2 minutes until slightly browned, then add bell peppers, onion, and garlic. Cook for another 4 minutes until tender.
  5. Pour in heavy cream, stir and let simmer for 2-3 minutes until thickened. Gradually stir in Parmesan cheese until melted, adjusting seasoning as needed.
  6. Return chicken and shrimp to skillet along with cooked pasta. Toss gently for 1-2 minutes until well combined and coated in sauce.
  7. Remove from heat, sprinkle with chopped parsley, and serve immediately.
