  • 1 Bell Pepper Any color of bell peppers is great for this dish.
  • 1 cup Mushrooms Can be omitted or replaced with other veggies.
  • 1 pound Ribeye Steak Deli roast beef is a great substitution.
  • 1 tablespoon Worcestershire Sauce Be sure to check for gluten if necessary.
For the Quesadillas
  • 4 large Tortillas Flour tortillas are preferred, but gluten-free options work too.
  • 2 cups Cheese Provolone or mozzarella recommended.
Optional Condiments
  • Mayo/Cheese Sauce Use according to preference.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add sliced onions, bell peppers, and mushrooms, sautéing for 5-7 minutes until softened.
  2. Push the sautéed vegetables to one side of the skillet. Add thinly sliced ribeye steak and cook for 2-3 minutes until browned.
  3. Sprinkle in Worcestershire sauce, salt, and pepper. Toss to combine and remove from heat.
  4. Place a tortilla in the skillet over medium heat. On one half, layer cheese and a spoonful of the steak mixture. Top with more cheese and fold the tortilla.
  5. Cook the folded quesadilla for 2-3 minutes on each side until golden and cheese has melted. Repeat with remaining tortillas.
  6. Once cooked, let cool slightly before slicing into wedges. Serve hot with optional condiments.
