Method
 

Step-by-Step Instructions
  1. Gently wash 2 cups of fresh lilac blossoms and remove from their stems.
  2. Add 4 cups of water to the saucepan with the lilac blossoms. Heat until boiling, then simmer for 5 minutes.
  3. Cover and steep the blossoms for 20 minutes before straining the mixture through a fine mesh strainer into a bowl.
  4. In a 1-gallon pitcher, combine the strained lilac infusion with 1 cup of sugar or honey and the juice of 2 fresh lemons. Stir until dissolved.
  5. Add 4 cups of cold water to the pitcher and stir well. Chill in the refrigerator for at least 1 hour.
  6. Serve over ice, garnished with lemon slices or additional lilac blossoms.
