  • 8 ounces Rotini or Medium Pasta Shape or any medium pasta shape you love
  • 1 cup Feta Cheese adjust based on your taste
  • 1 medium English Cucumber or any type of cucumber
  • 1 cup Grape Tomatoes halved
  • 1 medium Bell Pepper any color
  • 1/2 cup Black Olives optional
  • 1/4 cup Red Onion or Green Onions chopped
  • to taste Salt
  • to taste Black Pepper
For the Dressing
  • 1 cup Italian Dressing store-bought or homemade
  • 1/4 cup Fresh Parsley chopped, or substitute basil or cilantro

Method
 

Step-by-Step Instructions
  1. Cook the pasta in salted boiling water for 8-10 minutes until al dente, then drain and rinse under cold water.
  2. Chop the vegetables into bite-sized pieces.
  3. In a large mixing bowl, combine pasta and vegetables, add dressing and parsley, and toss gently.
  4. Season with salt and black pepper to taste.
  5. Fold in crumbled feta cheese and refrigerate for at least 2 hours before serving.
  6. Stir before serving and add more dressing if needed.
