Step-by-Step Instructions
  1. Generously season the boneless skinless chicken breasts with salt and pepper. Let it sit for about 10 minutes while you prepare the glaze.
  2. In a medium bowl, whisk together honey, fresh lime juice, lime zest, and minced garlic until smooth.
  3. Heat 1-2 tablespoons of cooking oil in a large skillet. Cook the seasoned chicken breasts for 6-7 minutes on each side, brushing with glaze in the last two minutes.
  4. Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
  5. In a mixing bowl, combine the cooked rice with chopped coriander and lime juice, seasoning with salt and pepper.
  6. Slice the ripe avocados, toss them with lime juice, salt, and pepper.
