  • 1 can Diced Tomatoes with Green Chilies
  • 2 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • to taste Salt & Black Pepper
For the Cornmeal Topping
  • 1 cup Cornmeal gluten-free if needed
  • 1 cup Milk non-dairy as a substitute
  • 1 large Egg or flax egg for egg-free version
  • 1 cup Shredded Cheddar Cheese or pepper jack for spicy kick
Optional Ingredients
  • 1 cup Black Olives diced
  • 1/4 cup Chopped Fresh Cilantro for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef and chopped onion for 5-7 minutes.
  3. Stir in black beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and black pepper, simmer for 5 minutes.
  4. In a mixing bowl, combine cornmeal, milk, and egg, whisk until smooth.
  5. Grease a 9x13-inch baking dish, layer half cornmeal mixture, beef mixture, remaining cornmeal mixture on top.
  6. Top with shredded cheddar cheese and black olives, bake for 30-35 minutes until golden brown.
  7. Allow to cool for 10 minutes before slicing, garnish with cilantro.
