Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) to prepare for cooking.
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Sear the chicken in an oven-safe skillet with olive oil for 3-4 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, sauté diced jalapenos and fresh peaches for 2-3 minutes.
  6. Whisk honey, apple cider vinegar, water, and cornstarch until smooth.
  7. Combine the honey mixture with the jalapenos and peaches, stirring and simmering for 2-3 minutes.
  8. Return the seared chicken to the skillet and spoon the sauce over it.
  9. Transfer the skillet to the oven and bake for 20-25 minutes until chicken reaches 165°F (74°C).
