Cooking Steps
- Preheat your oven to 425°F (220°C).
- In a frying pan over medium heat, cook bacon until crispy (6-8 minutes), then crumble it.
- In a large mixing bowl, combine ground beef, crumbled bacon, chili sauce, breadcrumbs, eggs, onion powder, seasoned salt, garlic, Worcestershire sauce, mustard, and cheddar cheese. Mix until just combined.
- Divide mixture into 8 equal portions and shape into mini meatloafs, pressing a small indentation into each.
- Brush BBQ sauce over tops of each meatloaf.
- Place meatloafs on a lined baking sheet and bake for 25 minutes, or until they reach an internal temperature of 160°F (71°C).
- Switch oven to broil for an additional 2-5 minutes for extra color.
- Let the mini meatloafs rest for 5 minutes before serving.
