- Begin by heating 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Once the butter melts, add 2 medium sliced onions, 1 teaspoon of sugar, 1 teaspoon of salt, and 1 teaspoon of pepper. Let the onions cook undisturbed for about 5 minutes. Stir occasionally for an additional 15 minutes until they are soft and caramelized. Stir in 1 teaspoon of balsamic vinegar and 1 teaspoon of thyme, cooking for 5 more minutes until jammy and fragrant.
- While the onions caramelize, preheat your oven to 400°F (200°C). Roll out 1 sheet of puff pastry on a lightly floured surface until about ¼ inch thick. Cut into six rectangles and arrange on a baking sheet lined with parchment paper. Spread the caramelized onion mixture over each rectangle, leaving a small border. Crumble 4 ounces of goat cheese on top of the onions, sprinkling a bit of extra thyme.
- Place the prepared tarts in the preheated oven and bake for 15 minutes or until golden and puffed up. Check every couple of minutes after the initial 15.
- Remove the tarts from the oven and let them cool on the baking sheet for about 5 minutes. Transfer to a serving platter and enjoy warm.
