  1. Begin by heating 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Once the butter melts, add 2 medium sliced onions, 1 teaspoon of sugar, 1 teaspoon of salt, and 1 teaspoon of pepper. Let the onions cook undisturbed for about 5 minutes. Stir occasionally for an additional 15 minutes until they are soft and caramelized. Stir in 1 teaspoon of balsamic vinegar and 1 teaspoon of thyme, cooking for 5 more minutes until jammy and fragrant.
  2. While the onions caramelize, preheat your oven to 400°F (200°C). Roll out 1 sheet of puff pastry on a lightly floured surface until about ¼ inch thick. Cut into six rectangles and arrange on a baking sheet lined with parchment paper. Spread the caramelized onion mixture over each rectangle, leaving a small border.
